Role Purpose The NSO Lead will be responsible for end-to-end expansion of Salad Days' cloud kitchens and future retail formats across multiple cities. This role owns the journey from identifying the right micro-market to launching a fully operational kitchen/store, and over time, will also define and build Salad Days' retail growth strategy from scratch. This is a builder role - for someone who thrives in ambiguity, moves fast, takes ownership, and treats expansion like a business, not a project. Key Responsibilities - Own end-to-end expansion of Salad Days' cloud kitchens and future retail formats across multiple cities - Scout, evaluate, and finalise high-potential locations with strong unit economics Drive complete NSO execution: property finalisation, kitchen layout, setup, licensing, vendors, capex, and launch readiness - Ensure timely, cost-efficient, and operationally stable launches with minimal post-launch issues - Build and define Salad Days' retail strategy from scratch, including store formats, rollout logic, and growth roadmap - Partner closely with leadership to shape long-term expansion and market entry strategy - Act as a single-point owner coordinating across Ops, SCM, Finance, HR, Training, Design, and Marketing - Create scalable NSO playbooks, SOPs, and launch checklists to improve speed and predictability - Track and improve expansion KPIs such as launch timelines, cost adherence, and post-launch stability - Solve on-ground challenges independently and make fast, commercially sound decisions - Bring a strong ownership mindset - treat each launch like your own business - Thrive in ambiguity, move fast, and execute without waiting for perfect playbooks - Willingness to travel extensively and work hands-on across cities - 7-12 years of experience in NSO / expansion / growth roles (QSR, cloud kitchen, retail, or food-tech preferred)
