Senior Manager/Assistant Manager - Purchase - Supply Chain Management


Role Overview:


To ensure timely, cost-effective, and quality procurement of Raw Materials, Packaging Materials, Consumables, Crockery & Cutlery for QSR operations, ensuring uninterrupted supply, cost optimization, and compliance with food safety and company standards.

Key Responsibilities:

A. Procurement & Sourcing:

- Procure food raw materials (rice, spices, oil, meat, poultry, dairy, vegetables, etc.) as per approved specifications.

- Handle procurement of packaging materials including primary and secondary packaging.

- Manage consumables such as cleaning chemicals, disposables, gloves, tissues, foils, and films.

- Source and manage crockery & cutlery (plates, bowls, spoons, forks, serving utensils, trays).

- Ensure uninterrupted availability across outlets and central kitchens.

B. Vendor Management:

- Identify, evaluate, onboard, and empanel vendors.

- Negotiate prices, payment terms, service levels, and contracts.

- Coordinate vendor audits for quality, hygiene, and compliance.

- Monitor vendor performance on OTIF, quality, and pricing.

- Develop alternate suppliers to mitigate supply risks.

C. Cost Control & Commercials:

- Achieve cost optimization through rate contracts, bulk buying, and alternate sourcing.

- Track commodity price trends and share market intelligence with management.

- Prepare comparative statements and support purchase committee approvals.

- Control Purchase Price Variance (PPV).

D. Quality & Compliance:

- Ensure materials comply with FSSAI standards and internal specifications.

- Coordinate with Quality, R&D, and Operations teams for trials and new developments.

- Handle quality rejections, returns, and corrective actions.

E. Inventory & Supply Planning Coordination:

- Coordinate with warehouse, stores, and operations teams.

- Monitor stock levels, consumption trends, and reorder points.

- Support demand planning for regular operations, festive peaks, and new store launches.

- Minimize expiry, wastage, and slow-moving inventory.

F. Documentation & Systems:

- Prepare and manage Purchase Orders, contracts, and vendor master data.

- Ensure ERP compliance and accurate system entries.

- Maintain records for audits and statutory requirements.

G. Cross-Functional Coordination:

- Coordinate with Finance for GRN, invoice matching, and vendor payments.

- Work with Operations and R&D for feedback and continuous improvement.

- Support new outlet openings and expansion activities.

Key Performance Indicators (KPIs):

- Cost savings achieved

- OTIF performance

- Quality rejection percentage

- Inventory days and stock availability

- Vendor compliance score

- Audit observations

Qualifications:

- Graduate in Commerce / Supply Chain / Management

- MBA / PG Diploma in Supply Chain preferred

Experience:

- 5-10 years

- Mandatory experience in QSR / FMCG / Food Retail
