Lead F& B Brand Development & Operations (Theme Parks) (15-17 yrs)


Key Responsibilities.

- Brand Creation & Concept Development.

- Conceptualize and develop scalable in-house F&B brands (QSR, caf, snack. formats).

- Define menu architecture, pricing strategy, and gross margin targets.

- Develop complete SOP manuals (recipes, portioning, service standards).

- Ensure replicable, multi-location rollout capability.

- Kitchen Planning & Infrastructure Setup.

- Plan Kitchen layouts.

- Identify and source commercial kitchen equipment.

- Ensure compliance with FSSAI, hygiene, and safety norms.

- Optimize capex without compromising efficiency.

- Procurement & Vendor Development.

- Develop vendor ecosystem for raw materials and packaging.

- Standardize procurement across locations.

- Manage food cost and wastage.

- Explore centralized production models where feasible.

Team Building & Training.

- Hire and structure F&B teams across parks.

- Develop training modules and SOP adherence systems.

- Drive productivity and reduce attrition.

- Establish performance tracking and audit systems.

- Operations P&L Management.

- Full ownership of F&B P&L across parks.

- Drive Spend Per Head (SPH) and upselling strategies.

- Control food cost, shrinkage, and inventory.

- Deliver targeted EBITDA margins.

- Online Aggregator & Digital Integration.

- Onboard brands on Zomato and Swiggy.

- Negotiate commercial terms.

- Manage ratings and customer feedback.

- Ensure packaging and delivery standards.

Experience:

- 8-15 years in QSR / Casual Dining / Multiplex / Mall F&B formats.

- Experience in multi-unit operations.

- Strong exposure to procurement, cost control, and P&L ownership.

- Experience in launching or scaling food brands preferred.

Skills & Competencies:

- Strong commercial and financial acumen.

- Kitchen layout & equipment planning expertise.

- Vendor negotiation and cost engineering.

- SOP creation and process standardization.

- Multi-location operations management.

- Data-driven decision-making.
