Captain Fresh - Head - Research & Development (8-10 yrs)
R & D Head
- Manage a team of food technologists and NPD Chefs.
- Product development in Nonveg category ( fish ; sea food and meat category)
- Responsible for the timely and right execution of product development activities including formulation development, supporting pilot & plant trials, sensory evaluation, technology transfer and R&D documentation (specifications, protocols, reports etc.)
- To develop products which compare well with the selected brands with help of the inhouse chefs.
- To deliver the process costs & margins in the company decided framework.
- Market Research on Cost, Packaging, quantity of produce, type of packaging and helping the business stay relevant.
- Category analysis & trending ; Experience of new food product development, awareness of formulation of food development, testing method for eg preservative testing, fragrance testing.
- Knowledge of Good Manufacturing Practices (GMP), HACCP Principles, ISO 9000, and applicable food codes for food service operations.
- Should have relevant experience to work with NPD, HACCP, quality, regulatory in executing the ideas.
- Application of domain knowledge (formulation/technology transfer/ innovation) to convert ideas into final product as per the intended design Creative development resulting in the launch of new products in both current and new categories.
